TerroirClay-limestone with some schistose materials as well as siliceous pebble. Soil perfectly suited for the production of high quality wines.
WinemakingGrape destemming. Fermentation at 28°C. Neutral alcohol is added over the cap (grape floating on the top of the vat) to stop this fermentation. 1 week of maceration.
Food & WineServed at 12°C. Appetizers, cherry duck, fine goat cheeses, desserts made with red fruits and chocolate.
